how does this fit with the existing seat fairing? Do you need to cut it to make this cover fit or does it just fit over the top?

it just fits straight on top of the the seat, no cutting anything, bolts onto the grab rail threads.

No, no room for rentec style rack, the cover sits over the rear plastics and also covers the space the grabrail / rack slots through to attach to the frame.

A Givi/kappa rack would fit with it as that replaces ther side rails.

Is that using wing rack stuff? I have a renthal rack which uses the grab rail fixing points. Might consider wing rack if I can find one at a reasonable price.

The topbox only arms don't touch the grab rail.  I don't think the wingrack does either (assuming you can find a fitting kit) but I've never seen one in the flesh on a cb500 to be sure.
