Corrosion between rear disc and wheel
Got my first nail in tyre today, and when they were doing the repair he commented that my rear disc was wasn't spinning smoothly and was catching on the pads and there was a huge build up of corrosion between disc and wheel. He scraped it all off for me and brushed it all clean back to the metal, and the wheel is noticeably better, (although I hadn't realised there was a problem before ) Anyone know Is this a common cb500 problem? is it something I should check regularly or is this unusual?

I take it you ride in all weathers? It gets quite a lot thrown at it back there so, yes, you might want to clean it regularly. I probably do mine every couple of months or sooner if the weather has been bad - pretty sure most bikes would need the same if ridden all year.

I do ride in all weathers, but getting access to anything on the back wheel is difficult for me as since I've had the bike lowered I can't get it on the centre stand on my own anymore (5'1" getting on a bit girl!). It's very frustrating knowing there's things to be done and not being able to do it without help. Still at least that's one more thing I've learnt and can make sure I get checked regularly. Steep learning curve yesterday, puncture, flat battery and wobbly disc all at once!

If you haven't got one already buy a rear paddock stand Stormy! You'll need a hand getting the bike up on it but after that you can do all the work you need.
I bought this one from amazon last year after my Micron one disappeared when we moved and it's a pretty sturdy bit of kit.
Edit: If you had that much rust on the disc I would clean up the slider pins on the rear caliper and lube with copper grease.
These seize solid over time thanks to road salt and you'll end up wearing one pad away and worst case the friction material can come off the pad.
This is part of my yearly servicing on the front and rear calipers so if you need any help let us know!

I think the pads and callipers are ok, as pads recently been replaced, but of course at that time the wheel wasn't off so all the corrosion impacted between the wheel and disc wouldn't have been visible. I'm very nervous of taking the back wheel off myself as I've only ever done it on a dead (it really was!) bike in a college workshop with other people there to help put it back together again, and it was hard enough getting them back in even with someone to help! I think I will get a paddock stand though even if its just so I can do my cleaning and oiling properly!
Just looked at the Biketek stand, does it fit the cb as it is or do I have to buy any other bits with it?

Nope that's all you need; it's the same one that I bought
It has to be the type with "cups"; the other type has hooks which hook onto bobbins which screw into the swing arm; the CB5 has no provision for fitting bobbins.
